Prior to the butcher date, we will ask you for your desired cuts by having you complete a cut sheet. If you have never filled out a cut sheet, we are happy to walk you through it at your request.
All cuts will be packaged according to your preferences in vacuum sealed packaging, flash frozen, and boxed.
A whole or ½ cow is invoiced at $5.39 per lb hanging weight and on average a ½ cow hang weight is around 370lb. Your final invoice will be emailed to you and due to Herd Heritage prior to pickup. This price does not include your butcher fee, which will be due directly to the butcher when you pick up.
At Herd Heritage, we want our pricing to be as transparent as possible. That’s why the cost of processing is paid directly to the butcher rather than being built into the price you pay us for your beef.
Butcher fees can vary depending on how you choose to have your beef processed. Your cut selections, packaging preferences, and other processing choices can all affect the final cost.
Instead of estimating that fee and adding it to your price per lb., we keep the two costs separate. You pay Herd Heritage for the animal, and you pay the butcher directly for the exact cost of processing your beef.
This means there is no markup and no guesswork on your butcher fee. On average, you can expect a butchering fee between $200- $400 for a half.
Once we have received your final payment, you can pick up your beef directly from the Butcher (Millersburg, Ohio).
**We do not keep large meat shares "in-stock"- all are custom butchered and your order must be placed prior to the estimated butcher date. Availability is limited
